PASTA SALAD (from Bon Appetit 1970 or so)
Ingredients
• 1/2 cup olive oil
• 1/4 cups red wine vinegar
• 1/4 cup tomato puree (par boiled remove skin)
• 1/4 bunch chopped green onion
• 1/2 bunch chopped parsley
• 1/2 teaspoon salt & pepper
• 3 hard boiled eggs, chopped
• Pimentos, Olives
(picture is not really the salad)
Directions
Combine olive oil, vinegar, add tomato puree and mix. Add egg,
onion, parlsey, salt, pepper, pimento, olives. Let stand 1 hour at
room temperature. Combine fusilli in shallow bowl. Toss.
I usually use about 8 tomoatos and double the oil and vinegar and eggs
